My Sister-in-Law is seriously super-mom-wife, she does it all and does it with such grace. So naturally I envy her and want to be just like her. Seriously, she is always doing something super fun and unique with my niece as well as cooking/baking amazing meals and treats! So, when she sent a picture of her amazing plate filled with meatloaf, garlic-red mashed potatoes and green bean casserole, I demanded that she give me the recipe. I made it for dinner and it was so good that I thought, I HAVE to share this with everyone!! Thanks Sis 😉
For the meatloaf use the following ingredients:
- 1 small cooking onion
- 1/4 cup of Italian Dressing
- 2 pounds of ground beef
- 3/4 cup of ketchup
- 1 package of Stove Stop Stuffing (chicken favor, just add directly from the box)
- 1 cup of water
- 2 egg whites
- 1/2 cup of shredded cheese
Heat the over to 375 degrees. Mix ground beef, onions, italian dressing, ketchup, stuffing mix, water, eggs and cheese in mixing bowl. Once mixed, shape the meat into a loaf, using a 10×5 pan, drizzle ketchup over the top. Bake for 55 minutes, sprinkle more cheese over the top and then bake for another 2 minutes.
For the garlic-red mashed potatoes use the following ingredients:
- 2 pounds of red potatoes
- 1 cup of milk (add milk for consistency)
- 1 stick of butter
- 1 teaspoon of salt
- 2 teaspoons of garlic powder
Peel (or leave peel, your preference) red potatoes. Cut potatoes in half and add them to boiling water, in a sauce pan. Boil potatoes util tender. Drain water and then add milk, butter, salt and garlic powder. Beat potatoes until you reach the consistency you desire (more milk may need to be added depending on your preference of consistency).
For the green bean casserole use the following ingredients:
- 2 cans of green beans
- 1 can of cream of mushroom soup
- 1 can of french’s fried onions
In oven safe dish add green beans, cream of mushroom soup and mix until cream of mushroom soup is blended. Sprinkle french’s fried onions on the top. Bake for 25 minutes.
